#1 Nine at night
108 Geobuk-ro, a jokbal shop inside the market. I arrive close to nine at night and almost everything has sold out. Only the extra-large front leg remains. One of those, then. To take away.
#2 Plastic wrap
The owner casually wraps it in plastic film. The Korean market way of packing food. One set of leafy greens, garlic, salted shrimp, and seasoned soybean paste is included, and I get one extra set.
#3 At home, the first piece
I unpack it at home. For the first bite, just the jokbal dipped in salted shrimp. Firm and pleasantly chewy. The more I chew, the more savory flavor comes from the pork fat and lean meat. No unpleasant pork smell. The skin is neatly cleaned of hair and the leg is well cooked. Korean market-style jokbal.
#4 A leafy wrap
Next, a wrap. Meat on the leaf, garlic dipped in seasoned soybean paste on top, then one bite. “That is the flavor.”
#5 My homemade beef soup
Just as the pork starts to feel rich, I have some spicy beef soup I cooked at home. The peppery broth leaves my stomach feeling refreshed. This is not a dish from the shop. It came from my own pot.
#6 What I missed
I had to take it away rather than eat at the shop. And I usually like to wrap jokbal together with buckwheat noodles, but the noodles had sold out, so I could not buy any. Next time, I will go earlier.
A word for visitors from abroad
A market jokbal shop mainly for takeaway. Choose between front leg (extra-large) and hind leg. Leafy greens, garlic, salted shrimp, and seasoned soybean paste come with it. It is good for eating at your accommodation. First, try the jokbal dipped in salted shrimp. If buckwheat noodles are still available, buy them too.
